The best thing about Chowhound is you realize there are others just like you out there. I too prefer salad forks, 4 tines and not too big. I even keep one in my desk drawer at work since everything in our shared kitchen are huge dinner forks or plastic.

They also have a cooking line and equipment fueled by gas under a hood. The same in many hotels as indicated. When you cook food for a 1000+ guests, cook & hold ovens are usually used.
