Yeah, it is. Instead of using chemicals to bond the non-stick to the pan, they use water (hydro). So, in turn, the only thing evaporating into the atmosphere is water instead of toxic chemicals. Same idea when it comes to use- if the stuff starts to scratch off, the pan may not be the prettiest but it's safe to use.

In addition like bamboo utensils better than woods. Agree that it is difficult to avoid "Made in China" and I do as much as I can as far as my budget allows.

I must disagree. Commercial cookware can be quite robust and still not expensive. Vollrath makes 3 lines of disk-bottom stainless cookware. I've got the Optio (cheapest) saucepans and paid for them about what you'd pay for thin cheap saucepans at a discount store.

Tupperware in good condition, with matching lid, but not serving a regular purpose in the kitchen was relegated to the garage sale bag. There is a really nice and complete fruit and vegetable freshness storage set that we just never got in the habit of using regularly but is truly a sensible item consisting of, I believe six pieces, including lids.

I contacted LUSIAN, they make custom ones for restaurants as well as 100% hand made ones called heritage models. However, the cost of the hand made heritage ones though not that much more cannot be shipped International priority mail but had to be expedited or express mail bec it is over the weight guideline per Portugal PO.

My steel is about 10 years old and I have never thought about replacing it. I have never heard of a honing steel wearing out. If you think that it may have filled up the grooves with metal particles, you can possibly clean it with a dry 3M scrubbie, but I wouldn't get it wet.

The Costco brand non-stick anodized aluminum are not coated w/Teflon. They are, if I am not mistaken, titanium based non-stick which has no toxic emmissions when over heated, like Teflon has shown. Pro: similar stes go for well over $400 and they have a great guarentee.

No, you're not doing anything wrong; food processors don't slice very evenly, imo. I don't bother using the slicing blade anymore, or just use it for potatoes for gratin, where the consistency and appearance of the slice doesn't matter; and I mostly just do it by hand.

The chain mail scrubber is very durable and a well polish chain mail scrubber will not scratch the seasoning off. However, to me, it seems a chain mail scrubber can remove large chunks of food residue, but not effective for the smaller ones.

Count me in the "can't stand the handles" group. It's incredibly uncomfortable to me. Since I now own Demeyere Silver7, it's a moot pt. Between that, my lodge cast iron, cast iron for the grill, De Buyer carbon steel, Demeyere plancha, 8 qt Staub round cocette, and 4 qt Staub braiser, I think I'm done with cookware.
